Ingredients
  

1 cup shredded unsweetened coconut

1/2 cup sweetened condensed milk

1 cup graham cracker crumbs

1 teaspoon vanilla extract

1/2 cup finely chopped dried fruit (like apricots or raisins)

1/2 cup mini chocolate chips (optional)

Extra shredded coconut for rolling

Instructions
 

In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, graham cracker crumbs, and vanilla extract.

    Stir thoroughly until all ingredients are well combined and a sticky mixture forms.

      If using, gently fold in the finely chopped dried fruit and mini chocolate chips to the mixture.

        Use your hands to form small balls, about 1 inch in diameter. You can wet your hands slightly to prevent sticking.

          Roll each ball in extra shredded coconut until they are fully coated.
