2 medium zucchinis

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

2 large eggs

    Prepare the Zucchini: Rinse and dry the zucchinis. Cut off the ends and slice them into 1/4-inch thick strips (like fries). Aim for uniform sizes for even cooking.

      Set Up Breading Station: In one bowl, whisk the eggs. In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
