1 lb kielbasa, diced

4 medium potatoes, peeled and cubed

1 onion, finely chopped

2 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

2 cups kale, chopped

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced kielbasa and sauté until browned, about 5 minutes.

    Add the chopped onion and minced garlic to the pot. Cook for an additional 3-4 minutes until the onions are translucent.

      Stir in the cubed potatoes and smoked paprika, mixing well to combine. Cook for another 2 minutes.

        Pour in the chicken broth and bring the mixture to a boil. Reduce heat, cover, and let it simmer for 15-20 minutes, or until potatoes are tender.

          Once the potatoes are cooked, stir in the heavy cream and chopped kale. Allow the soup to simmer for another 5 minutes until the kale is wilted and everything is heated through.

            Season the soup with salt and pepper to taste.
