1 pound kielbasa sausage, sliced into 1/2-inch pieces

2 cups baby potatoes, halved (or quartered if large)

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 large red onion, chopped

2 cups broccoli florets

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon dried Italian herbs

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    Prepare the veggies: In a large mixing bowl, combine the halved baby potatoes, red and yellow bell peppers, red onion, and broccoli florets.

      Season the vegetables: Drizzle the olive oil over the vegetables. Sprinkle with garlic powder, smoked paprika, dried Italian herbs, salt, and pepper. Toss until the vegetables are evenly coated.

        Add kielbasa: Add the sliced kielbasa to the bowl and toss again to combine all ingredients.

          Arrange on the sheet pan: Spread the mixture evenly onto a large baking sheet in a single layer to ensure even cooking. Make sure the kielbasa is evenly distributed amongst the vegetables.

            Roast in the oven: Place the sheet pan in the preheated oven and roast for about 25-30 minutes, stirring halfway through, until the potatoes are tender and the kielbasa is browned.
