Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb (450g) ground beef or ground turkey

1/2 cup panko breadcrumbs

1/4 cup scallions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon gochujang (Korean red pepper paste)

1 teaspoon sugar

1 egg, beaten

Salt and pepper to taste

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons gochujang

1 tablespoon lime juice

1 teaspoon honey

1 teaspoon sesame oil

1/2 teaspoon garlic powder

Optional: sliced scallions or sesame seeds for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Combine Meatball Ingredients: In a large mixing bowl, combine the ground beef or turkey, panko breadcrumbs, chopped scallions, minced garlic, grated ginger, soy sauce, sesame oil, gochujang, sugar, beaten egg, salt, and pepper. Mix until all ingredients are fully incorporated, but do not overmix.

      Form Meatballs: Using your hands, form the mixture into meatballs about 1-1.5 inches in diameter and place them evenly on the prepared baking sheet.

        Bake the Meatballs: Bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through and have a nice golden brown color.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, prepare the dip by whisking together the mayonnaise, gochujang, lime juice, honey, sesame oil, and garlic powder in a small bowl. Adjust spice levels by adding more gochujang if desired.

            Serve: Once the meatballs are done, allow them to cool slightly, then serve them with the spicy mayo dip on the side. Garnish with sliced scallions or sesame seeds if desired.
