For the Meatballs:

1 lb ground beef (or pork or chicken)

1/2 cup breadcrumbs

1/4 cup scallions, finely chopped

2 cloves garlic, minced

1 tbsp ginger, minced

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp gochujang (Korean chili paste)

1 egg

1 tbsp honey

1 tsp black pepper

1/2 tsp salt

1 tbsp sesame seeds (for garnish)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tbsp gochujang (adjust for spice level)

1 tbsp lime juice

1 tsp sesame oil

Pinch of cayenne pepper (optional)

Chopped scallions for garnish

Instructions
 

Prep the Meatball Mixture:

    - In a large bowl, combine the ground meat, breadcrumbs, chopped scallions, minced garlic, minced ginger, soy sauce, sesame oil, gochujang, egg, honey, black pepper, and salt. Mix until fully combined.

      Form the Meatballs:

        - Using your hands, shape the mixture into 1-inch meatballs and place them on a lined baking sheet. You should get about 20 meatballs.

          Bake the Meatballs:

            - Preheat your oven to 400°F (200°C). Bake the meatballs for 15-20 minutes or until they are cooked through and slightly golden on the outside. Internal temperature should reach 160°F (71°C).

              Make the Spicy Mayo Dip:

                - In a small bowl, whisk together the mayonnaise, gochujang, lime juice, sesame oil, and cayenne pepper. Adjust the gochujang for your preferred spice level.

                  Serve:

                    - Once the meatballs are cooked, remove them from the oven and let them cool for a few minutes. Transfer the meatballs to a serving platter, sprinkle with sesame seeds, garnish with chopped scallions, and serve with the spicy mayo dip on the side.
