Korean Street Toast (Gilgeori Toast)

Ingredients
  

4 slices of thick bread (such as milk bread or brioche)

3 large eggs

1/4 cup of milk

1/2 teaspoon of salt

1/4 teaspoon of black pepper

1 tablespoon of cooking oil (or butter)

1/2 cup of shredded cabbage

1/4 cup of grated carrots

1/4 cup of diced green onions

2 tablespoons of ketchup

2 tablespoons of mayonnaise

2 slices of cheese (such as American or mozzarella)

Optional: sliced ham or bacon

Instructions
 

Prepare the egg mixture: In a mixing bowl, beat the eggs and then add the milk, salt, and black pepper. Mix until well combined.

    Sauté the vegetables: In a medium saucepan, heat the cooking oil over medium heat. Add the shredded cabbage, grated carrots, and diced green onions. Sauté the vegetables for about 3-4 minutes, or until they are slightly softened. Set them aside.

      Cook the egg: In the same pan, pour in the egg mixture and let it cook undisturbed for a minute. As the edges start to set, gently stir with a spatula, folding the egg from the edges to the center. Cook until the eggs begin to look soft and fluffy but are still slightly runny. Remove from heat.

        Assemble the toast: Spread a thin layer of ketchup and mayonnaise on one side of each slice of bread. If using ham or bacon, place a slice on top of the spread on two of the bread slices.

          Add the egg and veggies: Divide the sautéed vegetables evenly between the two slices with ham or bacon, layering them on top of the meat. Then, add half of the scrambled eggs on top of each. Place a slice of cheese on each toast.

            Top and grill the toast: Place the remaining two slices of bread on top, spread side down, to create sandwiches. Heat additional oil (or butter) in a clean skillet over medium heat. Carefully place the sandwiches in the skillet and grill for about 3-4 minutes on each side, or until golden brown and the cheese has melted.

              Serve: Once grilled to perfection, remove from the skillet, cut in half, and serve immediately. Enjoy your delicious, savory Korean street toast!
