1 lb (450g) Italian sausage (or ground beef/turkey)

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

2 teaspoons Italian seasoning

1 teaspoon sugar (to balance acidity)

1 tablespoon olive oil

8 oz (225g) uncooked lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Salt and pepper to taste

Instructions
 

Cook the Sausage: In a large pot, heat olive oil over medium heat. Add the Italian sausage, breaking it up with a wooden spoon, and cook until browned (about 5-7 minutes). Drain excess fat if necessary.

    Sauté Vegetables: Add diced onion and minced garlic to the pot. Sauté for about 3-4 minutes, or until the onion is translucent.

      Add Tomatoes and Broth: Stir in the crushed tomatoes (with their juices) and chicken or vegetable broth. Mix in Italian seasoning, sugar, and add salt and pepper to taste. Bring the mixture to a boil.

        Add Noodles: Once boiling, reduce the heat to a simmer and stir in the broken lasagna noodles. Cook for about 10-12 minutes until the noodles are al dente.

          Mix Cheeses: Meanwhile, in a small bowl, mix the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese together. Set aside.

            Combine and Serve: Once noodles are cooked, ladle the soup into bowls. Adding a spoonful of the ricotta mixture to each bowl and sprinkling the remaining mozzarella and Parmesan cheese on top.

              Garnish: Finish with fresh basil leaves for an aromatic touch.
