1 lb ground beef (or turkey)

1 packet taco seasoning

1 cup salsa

1 cup black beans (drained and rinsed)

2 cups tortilla chips (crushed)

2 cups shredded cheddar cheese

1 cup sour cream

1 can (15 oz) corn (drained)

1 small onion (diced)

1 bell pepper (diced, any color)

1 jalapeño (finely chopped, optional)

1 avocado (diced)

Fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, sauté the diced onion and bell pepper until softened (about 3-5 minutes). Add the ground beef (or turkey) and cook until browned, breaking it up with a spatula. Drain any excess fat.

      Season the Meat: Stir in the taco seasoning and salsa. Add the black beans and corn, then mix everything well. Let it simmer for about 5 minutes to meld the flavors.

        Layer the Bake: In a 9x13 inch baking dish, start layering:

          - First, add half of the crushed tortilla chips evenly across the bottom.

            - Next, spoon half of the meat mixture over the chips.

              - Spread half of the sour cream over the meat mixture.

                - Sprinkle with half of the shredded cheddar cheese.

                  Repeat the Layers: Repeat the layers using the remaining tortilla chips, meat mixture, sour cream, and top with the remaining cheddar cheese.

                    Bake: Cover the baking dish with aluminum foil and place it in the oven. Bake for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                      Garnish and Serve: Once baked, let it rest for a few minutes. Top with diced avocado, fresh cilantro, and serve with lime wedges on the side for a zesty kick.
