12 oz spaghetti or your favorite pasta

1 cup ricotta cheese

Zest of 1 large lemon

Juice of 1 large lemon (about 2-3 tablespoons)

1/4 cup freshly grated Parmesan cheese (plus more for serving)

1/4 cup fresh basil leaves, chopped (plus more for garnish)

2 cloves garlic, minced

2 tablespoons extra virgin olive oil

Salt, to taste

Freshly cracked black pepper, to taste

Optional: Red pepper flakes for heat

Optional: Cherry tomatoes, halved for added color

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.

    Prepare the Lemon Basil Sauce: In a large bowl, combine ricotta cheese, lemon zest, lemon juice, Parmesan cheese, minced garlic, olive oil, and chopped basil. Stir until smooth and well combined. Season with salt and freshly cracked black pepper to taste.

      Combine Pasta and Sauce: Add the drained pasta to the ricotta mixture, tossing gently to coat the pasta evenly. If the sauce is too thick, gradually add reserved pasta water, a little at a time, until the desired creaminess is achieved.

        Serve: Divide the pasta into serving bowls. Top with additional Parmesan cheese, fresh basil leaves, and if desired, a sprinkle of red pepper flakes for some added spice. For a pop of color, scatter halved cherry tomatoes on top.
