Ingredients
  

1 cup heavy whipping cream

1 cup powdered sugar

2 teaspoons vanilla extract

Zest of 2 lemons

1/2 cup fresh lemon juice

9 ounces of lemon-flavored graham crackers

2 cups mixed berries (strawberries, blueberries, raspberries)

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, whip the heavy cream until it begins to thicken.

    Gradually add the powdered sugar and continue to whip until soft peaks form.

      Stir in the vanilla extract, lemon zest, and lemon juice, mixing until well combined.

        In a rectangular dish or a 9x13 inch baking pan, place a layer of lemon-flavored graham crackers at the bottom.

          Spread a layer of the lemon cream mixture over the graham crackers, smoothing it out evenly.

            Scatter a layer of mixed berries on top of the cream mixture.

              Repeat steps 4-6 until all ingredients are used, finishing with a layer of lemon cream on top.

                Cover the dish with plastic wrap and refrigerate for at least 4-6 hours, preferably overnight, to allow the flavors to meld and the cake to set.

                  When ready to serve, cut into squares and garnish with fresh mint leaves if desired.
