1 cup whole wheat flour

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 cup unsalted butter, melted and slightly cooled

2 large eggs

1/2 cup buttermilk (or milk with 1/2 tablespoon vinegar or lemon juice)

Zest of 1 large lemon

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

1 1/2 cups fresh blueberries (you can substitute with frozen, if necessary)

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or spray with non-stick cooking spray.

    Whisk the Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, salt, and baking soda until well combined.

      Mix the Wet Ingredients: In a separate bowl, beat the melted butter, eggs, buttermilk, lemon zest, lemon juice, and vanilla extract together until mixed thoroughly.
