Ingredients

1 cup (2 sticks) unsalted butter

1 1/2 cups brown sugar, packed

2 large eggs

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup fresh blueberries (or frozen, if preferred)

1/2 cup powdered sugar (for dusting)

Instructions

Brown the Butter: In a medium saucepan over medium heat, melt the butter. Continue to cook it, stirring frequently, until it turns a deep golden brown and has a nutty aroma, about 5-7 minutes. Be careful not to let it burn. Remove from heat and let it cool slightly.

Mix Wet Ingredients: In a large mixing bowl, combine the browned butter (make sure it's slightly cooled), brown sugar, lemon zest, lemon juice, and vanilla extract. Mix well until smooth.

Add Eggs: Beat in the eggs one at a time, ensuring each one is fully incorporated before adding the next.

Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt.

Mix Together: Gradually add the dry ingredients to the wet mixture and stir until just combined. Be careful not to overmix.

Fold in Blueberries: Gently fold in the fresh blueberries until evenly distributed throughout the dough.

Chill the Dough (Optional): For better texture, you may chill the dough in the refrigerator for 30 minutes. This step is optional but recommended for thicker cookies.

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Scoop and Bake: Using a cookie scoop (or tablespoon), drop dollops of dough onto the prepared baking sheet, leaving some space between each cookie. Bake for 12-15 minutes or until the edges are lightly golden.

Cool and Dust: Once baked, remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar before serving.
