Lemon Blueberry Cookies (Soft and Chewy)

1 ½ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

½ cup granulated sugar

½ cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 cup fresh blueberries (or frozen, thawed and drained)

Optional: ½ cup white chocolate chips

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy (about 2-3 minutes).

        Add Egg and Flavorings: Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined.

          Combine Wet and Dry: Gradually add the flour mixture into the wet ingredients, mixing on low speed just until combined. Be careful not to overmix, as this can result in tough cookies.

            Fold in Blueberries: Gently fold in the fresh blueberries and optional white chocolate chips using a spatula, ensuring they are evenly distributed in the dough.

              Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

                Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers look slightly underbaked. They will continue to firm up as they cool.

                  Cool and Serve: Remove the cookies from the oven and let them cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
