1 lb (450g) sea scallops, diver-caught if possible

3 tbsp unsalted butter

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 tbsp fresh parsley, chopped

Salt and pepper to taste

1 tbsp olive oil

Lemon wedges for garnish

Prepare the Scallops: Pat the scallops dry with paper towels to remove excess moisture. This helps them sear properly. Season both sides with salt and pepper.

    Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Ensure the pan is hot but not smoking.

      Sear the Scallops: Carefully place the scallops in the pan, ensuring they are not touching. Sear for about 2-3 minutes without moving them, until a golden crust forms.

        Flip and Cook: Gently flip the scallops and add the butter to the pan. Cook for another 2-3 minutes. As the butter melts, add the minced garlic and lemon zest, stirring gently to infuse the flavors.

          Add Lemon Juice: Once the scallops are opaque and tender, remove them from the heat. Squeeze the juice of the lemon over the scallops and give a light stir.

            Serve: Transfer the scallops to a serving plate, drizzle with the lemon butter sauce from the pan, and sprinkle with chopped parsley. Garnish with lemon wedges.
