Ingredients

1 cup all-purpose flour

1/4 cup powdered sugar

1/2 cup unsalted butter, softened

8 oz cream cheese, softened

1 cup granulated sugar

2 large eggs

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

1/2 teaspoon vanilla extract

Pinch of salt

Additional powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper for easy removal.

Prepare the Crust: In a medium bowl, combine the flour and powdered sugar. Mix well, then cut in the softened butter until the mixture resembles coarse crumbs. Press the crust mixture firmly into the bottom of the prepared baking pan.

Bake the Crust: Bake the crust in the preheated oven for 15 minutes or until lightly golden. Remove from the oven and set aside to cool slightly.

Make the Cream Cheese Filling: In a separate mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and continue mixing until well combined.

Add Remaining Ingredients: Add the eggs one at a time, mixing well after each addition. Then, mix in the lemon juice, lemon zest, vanilla extract, and a pinch of salt until fully incorporated and creamy.

Pour the Filling: Pour the cream cheese mixture over the cooled crust, spreading it evenly.

Bake the Bars: Bake in the oven for an additional 25-30 minutes or until the filling is set and the edges are lightly golden. The center might still jiggle slightly; it will firm up as it cools.

Cool and Chill: Allow the bars to cool at room temperature for about an hour, then refrigerate for at least 2 hours or until fully chilled.

Serve: Once chilled, dust with powdered sugar, cut into squares, and serve. Enjoy your delightful Lemon Cream Cheese Bars!
