2 cups all-purpose flour

1/3 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, cold and cubed

1 cup heavy cream

Zest of 1 large lemon

1 tablespoon fresh lemon juice

1 teaspoon pure vanilla extract

1 egg (for egg wash)

Additional granulated sugar (for sprinkling)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

      Add the cold, cubed butter into the flour mixture. Use a pastry cutter or your fingertips to blend until the mixture resembles coarse crumbs.

        In a separate bowl, combine the heavy cream, lemon zest, lemon juice, and vanilla extract. Mix gently.

          Pour the cream mixture into the dry ingredients. Stir with a spatula until just combined; do not overmix.

            Turn the dough onto a lightly floured surface. Pat it into a circle about 1-inch thick. Cut into 8 wedges or use a round cutter for individual scones.

              Place the scones on the prepared baking sheet. In a small bowl, beat the egg and brush it over the tops of each scone for a golden finish. Sprinkle with additional sugar if desired.

                Bake for 15-18 minutes or until the scones are golden brown and cooked through. Let them cool slightly on the baking sheet before transferring to a wire rack.
