1 ½ cups all-purpose flour

1 teaspoon baking powder

¼ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tablespoon lemon zest (from about 1 lemon)

2 tablespoons fresh lemon juice

½ teaspoon vanilla extract

½ cup powdered sugar (for coating)

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set this mixture aside.

      In a large bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer on medium speed until light and fluffy, about 2-3 minutes.

        Add the egg, lemon zest, lemon juice, and vanilla extract to the butter-sugar mixture. Mix until combined.

          Gradually add the dry ingredients to the wet mixture, mixing on low speed until just incorporated. Be careful not to overmix; a little lumpiness is fine.

            Chill the cookie dough in the refrigerator for 30 minutes, which helps the cookies maintain their shape while baking.

              Once chilled, using a tablespoon or cookie scoop, portion out the dough and roll each into a ball in your hands.

                Roll each ball in powdered sugar until fully coated, then place them on the prepared baking sheet about 2 inches apart.

                  Bake for 10-12 minutes, or until the edges are set but the centers are still soft. The cookies will crack and crinkle, giving them their beautiful appearance.

                    Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
