For the crust and crumb topping:

1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon baking powder

½ teaspoon salt

¾ cup unsalted butter, melted

For the lemon filling:

1 cup granulated sugar

2 large eggs

⅓ cup freshly squeezed lemon juice (about 2 lemons)

1 tablespoon lemon zest (from 1 lemon)

¼ cup all-purpose flour

½ teaspoon baking powder

Powdered sugar, for dusting

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

    Make the Crust: In a medium bowl, combine 1 ½ cups of flour, ½ cup granulated sugar, ½ teaspoon baking powder, and ½ teaspoon salt. Pour in the melted butter and mix until crumbly. Reserve about ¾ cup of this mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared baking dish.

      Bake the Crust: Bake the crust in the preheated oven for about 15 minutes, or until lightly golden. Remove from the oven and let it cool slightly.

        Prepare the Lemon Filling: In a separate bowl, whisk together 1 cup of granulated sugar and the eggs until well combined. Add the freshly squeezed lemon juice, lemon zest, ¼ cup of flour, and ½ teaspoon of baking powder. Mix until the batter is smooth and well-blended.

          Combine and Bake: Pour the lemon filling over the pre-baked crust and spread it evenly. Sprinkle the reserved crumb mixture over the top of the lemon filling.

            Final Bake: Return the pan to the oven and bake for an additional 20-25 minutes, or until the center is set and the crumb topping is golden brown.

              Cool and Cut: Allow the bars to cool in the baking dish on a wire rack. Once cooled, lift the bars out using the parchment overhang and cut them into squares.

                Serve: Dust with powdered sugar before serving for a beautiful finishing touch.
