1 cup granulated sugar

1/2 cup unsalted butter, softened

3 large eggs

1 tablespoon lemon zest (about 1 lemon)

1/2 cup fresh lemon juice (about 2 lemons)

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1 cup whole milk

Powdered sugar (for dusting)

Optional: fresh berries for garnish

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

    In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.

      Add the eggs one at a time, beating well after each addition. Mix in the lemon zest and fresh lemon juice until combined.

        In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the milk. Start and end with the flour mixture, mixing until just combined.

          Pour the batter into the prepared cake pan. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

            Once baked, allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

              Once cooled, dust the top with powdered sugar and serve with fresh berries if desired.
