4 boneless, skinless chicken breasts

1/4 cup fresh lemon juice (about 2 lemons)

1/4 cup extra virgin olive oil

3 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

1 teaspoon salt

1/2 teaspoon black pepper

Zest of 1 lemon

Instructions
 

In a medium bowl, whisk together the lemon juice, olive oil, minced garlic, chopped rosemary, thyme, parsley, salt, pepper, and lemon zest until well combined to create a marinade.

    Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish with plastic wrap.

      Marinate the chicken in the refrigerator for at least 1 hour, but for best results, let it marinate for 4-6 hours or overnight.

        Preheat your grill to medium-high heat. Lightly oil the grates to prevent sticking.

          Remove the chicken from the marinade and let any excess drip off. Discard the used marinade.

            Place the chicken on the grill and cook for 6-7 minutes on one side, until the meat easily releases and has nice grill marks.

              Flip the chicken and continue grilling for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.

                Remove the chicken from the grill and let it rest for 5-10 minutes before slicing. This helps to retain the juices.
