1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

3 tablespoons lemon zest (about 2 lemons)

2 tablespoons fresh lemon juice

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon vanilla extract

1 cup powdered sugar (for glaze)

2 tablespoons fresh lemon juice (for glaze)

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

      Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Add the lemon zest, lemon juice, and vanilla extract and mix until combined.

        In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix.

          Scoop tablespoons of dough and roll them into balls. Place them onto the prepared baking sheet, spacing them about 2 inches apart.

            Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may appear soft but will firm up as they cool.

              Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

                For the glaze, whisk together powdered sugar and fresh lemon juice in a small bowl until smooth. Drizzle the glaze over the cooled cookies.
