2 cups cooked turkey breast, shredded

1 cup quinoa, rinsed

2 cups low-sodium chicken broth

1 cup black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup red onion, finely chopped

1/2 cup corn (fresh or frozen)

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, for garnish

Optional: 1/2 cup feta cheese, crumbled

Cook the Quinoa: In a medium saucepan, combine the quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork.

    Prepare the Dressing: In a small bowl, whisk together lime juice, olive oil, cumin, smoked paprika, salt, and pepper until well combined. Adjust seasoning to taste.
