4 large russet potatoes, peeled and cubed

1 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1/2 cup cooked and crumbled bacon

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup additional shredded cheese for topping

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

      In a large mixing bowl, combine the sour cream, cream cheese, 1 cup of cheddar cheese, bacon, green onions, garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Add the drained potatoes to the mixture and gently fold until the potatoes are evenly coated.

          Transfer the potato mixture into a greased 9x13 inch baking dish, spreading it out evenly.

            Sprinkle the remaining 1/2 cup of shredded cheese on top.

              Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and slightly golden.

                Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired.
