4 large russet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

4 cups chicken broth (or vegetable broth)

1 cup heavy cream

1 cup shredded sharp cheddar cheese, plus extra for garnish

1/2 cup crumbled bacon (cooked)

1/2 cup sour cream

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/4 cup green onions, chopped (for garnish)

2 tablespoons olive oil

Instructions
 

In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.

    Add the diced potatoes to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.

      Using a potato masher, mash some of the potatoes in the pot to help thicken the soup, leaving some chunks for texture.

        Stir in the heavy cream, shredded cheddar cheese, cooked bacon, sour cream, salt, pepper, and smoked paprika. Heat through, stirring until the cheese is melted and the soup is creamy, about 5 minutes.

          Taste and adjust seasoning if necessary. Serve hot, garnished with extra cheddar cheese, crumbled bacon, and chopped green onions.
