4 cups cooked potatoes, cubed (preferably russet or Yukon gold)

2 cups cooked shredded chicken (rotisserie chicken works great)

1 cup ranch dressing

1 cup shredded cheddar cheese

1 cup sour cream

1/2 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon paprika

1 cup crispy bacon bits (cooked)

1/2 cup additional shredded cheddar cheese for topping

Optional: fresh parsley or chives for garnishing

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    Mix the Base: In a large mixing bowl, combine the cooked potatoes, shredded chicken, ranch dressing, shredded cheddar cheese, sour cream, chopped green onions, garlic powder, onion powder, black pepper, and paprika. Mix well until combined.

      Add the Bacon: Fold in the crispy bacon bits into the mixture to distribute evenly.

        Assemble the Casserole: Pour the chicken and potato mixture into the prepared baking dish, spreading it out evenly. Sprinkle the additional shredded cheddar cheese on top.

          Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
