2 large sweet potatoes, thinly sliced into rounds

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon chili powder

1/2 teaspoon garlic powder

1/4 teaspoon sea salt

1 cup black beans, rinsed and drained

1 cup corn, fresh or frozen

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cup Greek yogurt or sour cream

1 cup shredded cheddar cheese or dairy-free cheese

1/4 cup chopped fresh cilantro

1 lime, cut into wedges

Instructions
 

Prepare the Sweet Potatoes: Preheat your oven to 425°F (220°C). In a large bowl, toss the sweet potato rounds with olive oil, smoked paprika, chili powder, garlic powder, and sea salt until evenly coated.

    Bake the Sweet Potatoes: Spread the sweet potato slices in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until they are tender and slightly crispy.

      Assemble the Nachos: Once the sweet potatoes are done baking, lay them out on a large serving platter or baking dish. Evenly distribute the black beans, corn, cherry tomatoes, and shredded cheese over the sweet potato base.

        Melt the Cheese: Return the assembled nachos to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
