2 large sweet potatoes, washed and sliced into 1/4-inch rounds

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon cumin

1 cup black beans, rinsed and drained

1 cup corn kernels (frozen or fresh)

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1 jalapeño, thinly sliced (optional)

1 avocado, diced

1/2 cup Greek yogurt or sour cream (for drizzle)

1/4 cup fresh cilantro, chopped

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Sweet Potatoes: In a mixing bowl, toss the sweet potato rounds with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper until evenly coated.
