1 lb ground beef

6 slices of bacon, chopped

1 small onion, diced

2 cloves garlic, minced

1 cup cauliflower rice (fresh or frozen)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large eggs

1/2 cup heavy cream

2 tbsp Dijon mustard

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1/4 cup sliced pickles (optional, for topping)

2 tbsp chopped fresh parsley (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch casserole dish lightly.

    Cook the bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and let it drain on paper towels, leaving the bacon grease in the skillet.

      Brown the beef: In the same skillet, add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess grease if necessary.

        Combine ingredients: In a large bowl, mix the cooked bacon, beef mixture, cauliflower rice, half of the cheddar cheese, half of the mozzarella cheese, eggs, heavy cream, Dijon mustard, salt, pepper, and smoked paprika until well combined.

          Transfer to casserole dish: Pour the mixture into the prepared casserole dish and spread it evenly. Top with the remaining cheddar and mozzarella cheese.

            Bake the casserole: Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden brown.

              Garnish and serve: Once done, remove from the oven and let it cool for a few minutes. Before serving, garnish with sliced pickles and chopped fresh parsley.
