1 lb (450g) ground beef (preferably lean)

4 cups green cabbage, finely shredded

1 medium onion, thinly sliced

2 cloves garlic, minced

1 inch piece of fresh ginger, grated

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon red pepper flakes (adjust to taste)

2 green onions, chopped (for garnish)

Salt and pepper to taste

1 tablespoon olive oil (for cooking)

Instructions
 

Prepare the Ingredients: Start by shredding the cabbage, slicing the onion, mincing the garlic, and grating the ginger. Set everything aside to have the ingredients ready for stir-frying.

    Cook the Ground Beef: In a large skillet or wok, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Season lightly with salt and pepper. Once browned, remove the beef from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the onions, garlic, and ginger. Stir-fry for about 2-3 minutes or until the onions are soft and translucent.

        Add the Cabbage: Increase the heat to high and add the shredded cabbage to the skillet. Stir-fry for about 5-7 minutes until the cabbage wilts and begins to caramelize slightly.

          Combine and Flavor: Return the cooked ground beef to the skillet with the cabbage mixture. Add the soy sauce, sesame oil, rice vinegar, and red pepper flakes. Toss everything together and stir-fry for another 2-3 minutes, allowing the flavors to meld. Adjust seasoning with more salt and pepper, if needed.

            Serve: Remove from heat and garnish with chopped green onions. Serve hot on its own or with a side of cauliflower rice for a low-carb option.
