4 medium zucchinis, sliced into thin rounds

1 cup shredded cheddar cheese

1 cup cottage cheese (or cream cheese for a richer flavor)

1/2 cup grated Parmesan cheese

1/2 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 large eggs

1 cup cooked ground turkey or beef (optional for added protein)

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: In a large bowl, place the sliced zucchini. Sprinkle with salt and let it sit for about 15 minutes. This will help remove excess moisture. After 15 minutes, pat the zucchini slices dry with a paper towel.

      Cook the Aromatics: In a skillet over medium heat, add a small amount of olive oil. Sauté the chopped onion and minced garlic until the onion becomes translucent, about 4-5 minutes. Remove from heat and set aside.

        Mix the Filling: In a large mixing bowl, combine the zucchini, sautéed onion and garlic, cottage cheese, half of the cheddar cheese, Parmesan cheese, dried oregano, dried basil, and cooked ground meat (if using). Season with salt and pepper. Mix well.

          Add Eggs: Beat the eggs in a separate bowl and then add them to the mixture, ensuring everything is well incorporated.

            Assemble the Casserole: Grease a 9x13-inch casserole dish. Pour the zucchini mixture into the dish, spreading it evenly. Top with the remaining cheddar cheese.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden and bubbly.

                Garnish and Serve: Remove from the oven and let it cool for about 5 minutes. Garnish with fresh parsley before slicing and serving.
