2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups fresh spinach, washed and roughly chopped

1 can (14 oz) artichoke hearts, drained and chopped

3 cups vegetable broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon lemon juice

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until translucent.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the chopped spinach to the pot, and cook until wilted, about 2-3 minutes.

        Mix in the artichoke hearts, vegetable broth, thyme, and red pepper flakes (if using). Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 10 minutes.

          Using an immersion blender, carefully blend the soup until smooth (you can also transfer it in batches to a regular blender). If you prefer a chunkier texture, blend only half of the soup.

            Stir in the heavy cream, lemon juice, and grated Parmesan cheese. Season with salt and pepper to taste. Heat through for another 5 minutes but do not boil.

              Serve the soup hot, garnished with fresh parsley and an extra sprinkle of Parmesan cheese if desired.
