6 large eggs

1 cup milk

1 cup cooked and crumbled breakfast sausage (or substitute with turkey sausage)

1 cup diced bell peppers (mix of red and green)

1 cup shredded cheese (cheddar, Monterey Jack, or your choice)

1 cup cooked and diced potatoes (or frozen hash browns)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

6 large flour tortillas (10-inch)

Optional: salsa or hot sauce for serving

Instructions
 

Prepare the Filling: In a large mixing bowl, whisk together the eggs and milk until combined. Add the cooked sausage, diced bell peppers, cooked potatoes, garlic powder, onion powder, salt, and pepper. Stir well to combine.

    Cook the Egg Mixture: In a large skillet over medium heat, pour in the egg mixture. Cook, stirring occasionally, for about 5-7 minutes until the eggs are set but still slightly soft. Remove from heat and stir in the shredded cheese until melted and well-distributed.

      Assemble the Burritos: Lay out the flour tortillas on a clean surface. Spoon about 1/2 cup of the egg mixture into the center of each tortilla. Fold the sides in and then roll up the burrito tightly from the bottom to the top. Repeat with the remaining tortillas and filling.

        Prepare for Freezing: Once assembled, wrap each burrito tightly in aluminum foil or parchment paper. Place the wrapped burritos in a resealable freezer bag, labeling with the date.

          Freeze: Store the burritos in the freezer for up to 3 months.

            Reheat & Serve: When ready to enjoy, remove a burrito from the freezer and unwrap it. Microwave for 2-3 minutes (or longer if still frozen) until heated through, or bake at 350°F (175°C) for 20-25 minutes. Serve with your favorite salsa or hot sauce.
