1 cup coconut milk (canned or fresh)

1 cup ripe mango, blended until smooth (about 1 medium mango)

1/4 cup chia seeds

2 tablespoons maple syrup or honey (adjust to taste)

1 teaspoon vanilla extract

Pinch of sea salt

Fresh mango cubes and shredded coconut for topping

Mint leaves for garnish (optional)

Instructions
 

Prepare the Coconut Base: In a mixing bowl, combine the coconut milk with the maple syrup (or honey), vanilla extract, and a pinch of sea salt. Whisk until smooth and combined.

    Incorporate Chia Seeds: Gradually add the chia seeds to the coconut milk mixture while continuously stirring. This will prevent the seeds from clumping together.

      Blend the Mango: In a blender, puree the ripe mango until smooth. If you like, you can reserve a few mango chunks for topping later.
