1 lb boneless, skinless chicken thighs, cut into 1-inch cubes

1 ripe mango, peeled and diced into 1-inch pieces

2 tablespoons olive oil

2 tablespoons honey

1-2 habanero peppers, finely chopped (adjust based on heat preference)

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 tablespoon fresh lime juice

Salt and pepper, to taste

Skewers (soaked in water if using wooden skewers)

Instructions
 

Marinate the Chicken: In a large bowl, combine the olive oil, honey, chopped habanero peppers, minced garlic, smoked paprika, ground cumin, lime juice, salt, and pepper. Add the chicken cubes and ensure they are thoroughly coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prepare the Skewers: After marinating, alternate threading the marinated chicken and diced mango onto the skewers, leaving a little space between each piece to allow for even cooking.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). Ensure your grill grates are clean and lightly oiled to prevent sticking.

        Grill the Skewers: Once the grill is ready, place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The chicken should reach an internal temperature of 165°F (74°C).
