Maple Bacon Brussels Slaw

1 pound Brussels sprouts, trimmed and thinly sliced

6 slices of thick-cut bacon, chopped

1/4 cup maple syrup

1/4 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup shredded carrots

1/2 cup chopped green onions

1/2 cup toasted pecans (optional for extra crunch)

Instructions
 

Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 6-8 minutes. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease, leaving about 1 tablespoon of bacon fat in the skillet.

    Prepare the Brussels Sprouts: In the same skillet with the reserved bacon fat, add the thinly sliced Brussels sprouts. Sauté them over medium heat until they soften slightly but still have some crunch, about 4-5 minutes.

      Make the Dressing: In a mixing bowl, combine mayonnaise, maple syrup, apple cider vinegar, Dijon mustard, salt, and black pepper. Whisk until smooth and well blended.

        Combine Ingredients: In a large serving bowl, combine the sautéed Brussels sprouts, crispy bacon, shredded carrots, and chopped green onions.

          Add Dressings: Pour the maple dressing over the slaw mixture and toss gently until everything is evenly coated. Taste and adjust seasoning if necessary.

            Chill and Serve: For the best flavor, cover and let the slaw chill in the refrigerator for at least 30 minutes before serving. Just before serving, sprinkle toasted pecans on top for added crunch, if desired.
