1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 large egg

1 cup milk

2 tablespoons melted butter

1 teaspoon vanilla extract

1 cup cooked bacon, chopped into small pieces

1/4 cup maple syrup (plus more for drizzling)

Cooking spray or butter (for greasing)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a mini muffin tin with cooking spray or butter.

    In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

      In another bowl, beat the egg and then mix in the milk, melted butter, and vanilla extract. Stir until combined.

        Pour the wet ingredients into the dry ingredients and mix until just combined; be careful not to overmix. Fold in the chopped bacon and maple syrup, ensuring they're evenly distributed.

          Spoon the pancake batter into the mini muffin tin, filling each cup about 2/3 full.

            Bake in the preheated oven for 12-15 minutes or until golden brown and a toothpick inserted into the center comes out clean.

              Let the pancake bites cool in the tin for a few minutes before transferring them to a wire rack.

                Serve warm drizzled with additional maple syrup and enjoy these delightful bites!
