Ingredients

1 lb fresh salmon fillet, skinless and boneless

2 tablespoons Dijon mustard

3 tablespoons pure maple syrup

1 tablespoon olive oil

1 tablespoon lemon juice

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ tsp dried)

½ teaspoon salt

¼ teaspoon black pepper

Sesame seeds (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Prep the Salmon: Start by cutting the salmon fillet into bite-sized cubes (about 1-inch pieces). Pat them dry with a paper towel and set aside.

Make the Marinade: In a medium bowl, whisk together the Dijon mustard, maple syrup, olive oil, lemon juice, minced garlic, thyme, salt, and black pepper. This sweet and tangy marinade will give your salmon bites a wonderful flavor.

Marinate the Salmon: Place the cubed salmon into a resealable plastic bag or a shallow dish. Pour the marinade over the salmon, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (for optimal flavor, marinate for up to 2 hours).

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Bake the Salmon Bites: Remove the salmon from the marinade and arrange the pieces evenly on the prepared baking sheet. Reserve the leftover marinade for brushing later. Bake in the preheated oven for 10-12 minutes or until the salmon is cooked through and flakes easily with a fork.

Add Extra Flavor: For a touch of caramelization, brush the reserved marinade over the salmon bites halfway through the baking time.

Garnish and Serve: Once cooked, remove from the oven and let cool slightly. Sprinkle sesame seeds and chopped parsley over the top before serving.

Enjoy: Serve the Maple Dijon Salmon Bites warm as an appetizer or with your favorite side dish for a delightful meal!
