1 lb baby carrots (or regular carrots, peeled and sliced into sticks)

3 tablespoons unsalted butter

1/4 cup pure maple syrup

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: 1 tablespoon chopped fresh parsley for garnish

Prep the Carrots: If using regular carrots, peel and cut them into uniform sticks, about 1/4-inch thick, to ensure even cooking. If using baby carrots, rinse them under cold water and set aside.

    Cook the Carrots: In a large skillet, add the butter and melt it over medium heat. Once melted, add the prepared carrots to the skillet. Sauté the carrots for about 5-7 minutes, stirring occasionally until they start to soften and turn vibrant in color.

      Add Flavor: Pour in the maple syrup, stirring to coat the carrots evenly. Then, add the fresh thyme, salt, and black pepper. Continue to cook for another 5-10 minutes. Stir the carrots occasionally as they caramelize in the maple glaze.

        Check for Tenderness: Test the carrots with a fork. They should be tender but still have a bit of a bite to them. If they need more time, reduce the heat to low, cover, and let them simmer in the glaze for an additional 2-3 minutes.
