Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup unsalted butter, cold and cubed

1 cup mashed sweet potatoes (about 1 large sweet potato)

1/3 cup maple syrup

1/2 cup buttermilk

1 teaspoon vanilla extract

For the Maple Glaze:

1/2 cup powdered sugar

2 tablespoons maple syrup

1-2 tablespoons milk (as needed for desired consistency)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set it aside.

Prepare Sweet Potatoes: If you haven't already, peel and cube the sweet potato. Boil in a pot of salted water until fork-tender, about 15-20 minutes. Drain, mash, and let it cool slightly.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

Cut in Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, blend the butter into the flour until the mixture resembles coarse crumbs.

Combine Wet Ingredients: In another bowl, whisk together the mashed sweet potatoes, maple syrup, buttermilk, and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Gently stir until just combined; do not overmix. The dough will be slightly sticky.

Shape Biscuits: Turn the dough out onto a floured surface. Pat it down into a rectangle about 1 inch thick. Fold it in half and pat it again to flatten slightly. Repeat this folding process two more times. Then, use a biscuit cutter to cut out biscuits and place them on the prepared baking sheet.

Bake: Bake the biscuits in the preheated oven for 15-18 minutes, or until they are golden brown on top.

Prepare Maple Glaze: While the biscuits are baking, prepare the glaze. In a small bowl, whisk together the powdered sugar, maple syrup, and enough milk to achieve your desired glaze consistency.

Glaze the Biscuits: Once the biscuits are done baking, remove them from the oven and let them cool slightly. Drizzle the maple glaze over the warm biscuits before serving.

Serve: Enjoy your delicious Maple Glazed Sweet Potato Biscuits warm, best paired with a cup of coffee or tea!
