1 lb baby carrots (or sliced regular carrots)

3 tablespoons soy sauce

2 tablespoons pure maple syrup

1 tablespoon honey (or agave syrup for vegan)

1 tablespoon unsalted butter (or coconut oil for vegan)

2 teaspoons fresh ginger, grated

1 teaspoon garlic, minced

1 tablespoon sesame seeds (optional, for garnish)

1 teaspoon fresh parsley, chopped (optional, for garnish)

Salt and pepper to taste

Prepare the Carrots: If using regular carrots, peel and slice them diagonally into 1-inch pieces. If using baby carrots, leave them whole.

    Cooking the Carrots: In a large skillet, bring about 2 inches of salted water to a boil over medium-high heat. Add the carrots and cook for about 4-5 minutes, or until they are just tender but still crisp. Drain and set aside.

      Making the Glaze: In the same skillet, melt the butter (or coconut oil) over medium heat. Once melted, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant, being careful not to burn them.
