Ingredients

4 salmon fillets (about 6 ounces each)

1/4 cup soy sauce (low sodium recommended)

1/4 cup pure maple syrup

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 tablespoon sesame seeds (toasted)

2 green onions, finely chopped (for garnish)

Salt and pepper, to taste

Instructions

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, maple syrup, Dijon mustard, minced garlic, grated ginger, sesame oil, and rice vinegar until well combined.

Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour half of the marinade over the salmon, making sure each piece is well-coated. Reserve the other half of the marinade for glazing later. Let the salmon marinate in the refrigerator for at least 30 minutes (or up to 2 hours for stronger flavor).

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.

Bake the Salmon: Remove the salmon from the marinade and place the fillets on the prepared baking sheet, skin side down. Season lightly with salt and pepper. Bake the salmon in the preheated oven for about 12-15 minutes, or until the salmon flakes easily with a fork.

Glaze Finishing Touch: While the salmon is baking, transfer the reserved marinade to a small saucepan. Bring to a simmer over medium heat and cook for about 5-7 minutes until the sauce thickens slightly.

Glazing the Salmon: In the last 2 minutes of baking, brush the thickened glaze over the salmon fillets. Return to the oven to allow the glaze to caramelize a bit.

Serve: Once the salmon is cooked, remove it from the oven. Garnish with toasted sesame seeds and chopped green onions before serving. Pair with steamed rice or sautéed vegetables to complete the meal.
