1 block (14 oz) firm tofu, drained and pressed

3 tablespoons maple syrup

2 tablespoons Sriracha sauce

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon grated fresh ginger

2 tablespoons sesame oil (divided)

1 tablespoon cornstarch

Salt and pepper to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Prepare the Tofu:

    - Preheat your oven to 400°F (200°C).

      - Cut the pressed tofu into bite-sized cubes. Pat dry with a paper towel to remove excess moisture.

        Make the Glaze:

          - In a small bowl, whisk together maple syrup, Sriracha sauce, soy sauce, rice vinegar, minced garlic, and grated ginger until well combined. Set aside.

            Coat the Tofu:

              - In a large mixing bowl, combine the tofu cubes with cornstarch, salt, and pepper. Gently toss until all cubes are evenly coated.

                Sauté the Tofu:

                  - Heat 1 tablespoon of sesame oil in a large skillet over medium heat. Add the tofu cubes in a single layer and sauté until golden and crispy on all sides, about 10-12 minutes. You may need to do this in batches to avoid overcrowding the skillet. Remove tofu from the skillet and set aside.

                    Glaze the Tofu:

                      - In the same skillet, add the remaining tablespoon of sesame oil. Pour in the glaze mixture and bring it to a simmer over medium heat.

                        - Add the cooked tofu back to the skillet and toss gently to coat evenly in the glaze. Cook for an additional 2-3 minutes, allowing the glaze to thicken slightly.

                          Serve:

                            - Remove from heat and transfer the glazed tofu to a serving platter. Garnish with sliced green onions and sesame seeds.

                              - Serve hot over a bed of cooked rice or quinoa for a delightful meal.
