2 large cucumbers, peeled and thinly sliced

1 medium red onion, thinly sliced

3 medium ripe tomatoes, chopped

1 cup apple cider vinegar

1/2 cup water

4 tablespoons olive oil

2 tablespoons honey or agave syrup

1 teaspoon salt

1/2 teaspoon black pepper

2 teaspoons dried oregano

Fresh parsley, chopped (for garnish)

Prepare the Vegetables: In a large mixing bowl, combine the sliced cucumbers, red onion, and chopped tomatoes. Toss them gently to mix well.

    Make the Marinade: In a separate bowl, whisk together the apple cider vinegar, water, olive oil, honey (or agave syrup), salt, black pepper, and dried oregano until well combined.

      Marinate: Pour the marinade over the vegetable mixture. Toss everything together until the vegetables are evenly coated in the marinade.

        Rest: Cover the bowl with plastic wrap or a lid and let it marinate in the refrigerator for at least 1 hour. For optimal flavor, let it sit for 3-4 hours or overnight.

          Serve: Once marinated, give the salad a gentle toss again and adjust seasoning if needed. Serve chilled, garnished with freshly chopped parsley.
