2 cups cucumbers, thinly sliced (about 2 medium cucumbers)

1 medium red onion, thinly sliced

2 cups cherry tomatoes, halved

1/4 cup fresh parsley, chopped

1/4 cup apple cider vinegar

2 tablespoons olive oil

1 tablespoon honey or agave syrup

1 teaspoon garlic powder

Salt & pepper to taste

1 teaspoon dried oregano (optional)

Crumbled feta cheese (for serving, optional)

Instructions
 

Prepare the Vegetables: In a large bowl, combine the thinly sliced cucumbers, red onion, and halved cherry tomatoes. Toss them gently to mix.

    Make the Marinade: In a separate bowl, whisk together the apple cider vinegar, olive oil, honey (or agave syrup), garlic powder, salt, pepper, and dried oregano (if using). Taste the marinade and adjust seasoning to your preference.

      Combine: Pour the marinade over the vegetable mixture in the large bowl. Stir well to ensure all the vegetables are evenly coated.

        Marinate: Cover the bowl with plastic wrap or transfer the salad to an airtight container. Let it marinate in the refrigerator for at least 30 minutes. For optimum flavor, allow it to marinate for 2-3 hours.

          Serve: Just before serving, stir in the chopped fresh parsley. If desired, sprinkle crumbled feta cheese on top for an extra burst of flavor. Serve chilled or at room temperature.
