Ingredients
  

2 boneless, skinless chicken breasts

8 ounces penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 teaspoon dried oregano

1 teaspoon dried basil

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Red pepper flakes (optional, for heat)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.

    Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and let rest. Once cooled, slice into strips.

      Make the Sauce: In the same skillet, add garlic and sauté for about 1 minute until fragrant. Add the sun-dried tomatoes, dried oregano, and dried basil; stir and cook for another minute.

        Add Cream and Cheese: Lower the heat and pour in the heavy cream, stirring continuously. Gradually add the grated Parmesan cheese and mix until the sauce is creamy and well combined. If the sauce is too thick, add a little reserved pasta water until reaching desired consistency.

          Combine Everything: Add the cooked pasta to the skillet, tossing it with the sauce to ensure it’s well-coated. Fold in the sliced chicken and season with additional salt, pepper, and red pepper flakes if using.

            Serve: Plate the pasta with a sprinkle of fresh basil leaves on top for garnish. Serve immediately and enjoy a dish that’s sure to impress!
