2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

9 oz fresh cheese tortellini

2 cups baby spinach

Fresh basil, for garnishing

Optional: Red pepper flakes, for added spice

Cook the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 5-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and let it rest before slicing.

    Sauté Garlic: In the same skillet, add minced garlic and Italian seasoning. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

      Create the Sauce: Add the chopped sun-dried tomatoes to the skillet, stirring to combine. Then pour in the heavy cream and chicken broth, bringing the mixture to a simmer. Allow it to reduce slightly for about 2-3 minutes.

        Add Cheese and Spinach: Stir in the grated Parmesan cheese until melted and well combined. Add the baby spinach, allowing it to wilt in the sauce.

          Cook the Tortellini: In a separate pot, bring water to a boil and cook the cheese tortellini according to package instructions. Drain and set aside.

            Combine Everything: Slice the cooked chicken and add it back to the skillet with the sauce. Gently fold in the cooked tortellini, ensuring everything is well-coated in the creamy sauce.

              Serve: Taste and adjust seasoning with additional salt, pepper, or red pepper flakes if desired. Serve hot, garnished with fresh basil.
