Ingredients
  

1 pound ground beef (or turkey for a lighter option)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped parsley

1 egg

3 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon Italian seasoning

6 cups beef broth

1 can (14.5 oz) diced tomatoes (with juice)

1 cup carrots, sliced

1 cup celery, diced

1 cup spinach, fresh (or kale)

1 bay leaf

Olive oil for sautéing

Optional: Fresh herbs for garnish (like basil or additional parsley)

Instructions
 

In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, salt, black pepper, and Italian seasoning. Mix until well combined.

    Shape the mixture into 1-inch meatballs and set aside.

      In a large pot, heat a splash of olive oil over medium-high heat. Add the meatballs in batches, browning them on all sides for about 5 minutes. Remove and set aside.

        In the same pot, add a little more olive oil if necessary, and sauté the diced onions, carrots, and celery for about 5 minutes until tender.

          Pour in the beef broth and diced tomatoes (including juice), and add the bay leaf. Bring the mixture to a boil.

            Once boiling, gently add the browned meatballs to the soup. Reduce heat to a simmer and cook for another 20 minutes, allowing the flavors to meld and the meatballs to cook through.

              In the last 5 minutes of cooking, stir in the fresh spinach or kale until wilted. Remove the bay leaf before serving.

                Ladle the soup into bowls and garnish with fresh herbs if desired. Serve hot and enjoy!
