200g feta cheese, cubed

4 large eggs

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

2 cloves garlic, minced

1/4 cup kalamata olives, pitted and halved

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Freshly ground black pepper, to taste

2 tablespoons olive oil

Fresh parsley or basil, for garnish

Crusty bread, for serving

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium baking dish, drizzle 2 tablespoons of olive oil evenly across the bottom.

      Scatter the cubed feta cheese in the dish, making sure it's evenly distributed.

        Add the halved cherry tomatoes, chopped red onion, minced garlic, and kalamata olives around the feta.

          Sprinkle the dried oregano and red pepper flakes (if using) over the entire mixture. Season with freshly ground black pepper.

            Carefully crack the eggs over the top of the mixture, ensuring they are evenly spaced apart.

              Place the baking dish in the oven and bake for about 25-30 minutes, or until the egg whites are set but the yolks are still slightly runny (or cooked to your preferred doneness).

                Remove from the oven and let it cool slightly. Garnish with fresh parsley or basil before serving.
