2 cups all-purpose flour

1 teaspoon instant yeast

1 teaspoon sugar

1 teaspoon salt

¾ cup warm water (about 110°F/43°C)

2 tablespoons olive oil (plus extra for brushing)

1 teaspoon dried oregano

1 cup cherry tomatoes, halved

½ cup feta cheese, crumbled

½ cup kalamata olives, pitted and sliced

1 cup baby spinach leaves

Fresh parsley, chopped (for garnish)

Optional: Zest of 1 lemon

Prepare the Dough: In a large bowl, combine the flour, instant yeast, sugar, and salt. Mix well. Gradually add the warm water and olive oil to the dry ingredients, stirring until a sticky dough forms.

    Knead the Dough: Transfer the dough to a lightly floured surface. Knead for about 5-7 minutes until the dough is smooth and elastic. Form it into a ball and place it in a lightly oiled bowl, turning to coat. Cover with a kitchen towel or plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.

      Preheat the Grill or Oven: If using a grill, preheat it to medium-high heat. For the oven, preheat to 475°F (245°C) and place a baking stone or inverted baking sheet inside.

        Shape the Flatbreads: Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a ball, then flatten it with your hands or a rolling pin into a circle about ¼ inch thick.

          Add the Toppings: Transfer the flatbreads to a parchment-lined baking sheet or directly onto the grill. Brush each flatbread lightly with olive oil and sprinkle with dried oregano. Top with cherry tomatoes, feta cheese, kalamata olives, and baby spinach. If desired, add lemon zest for an extra zing.

            Cook the Flatbreads: For grilling, cook each flatbread for about 3-4 minutes per side, or until they are lightly charred and cooked through. For the oven, bake them for 8-10 minutes until golden and bubbly.

              Garnish and Serve: Once cooked, remove the flatbreads from the heat and let them cool slightly. Garnish with fresh parsley and serve warm with a drizzle of olive oil and additional feta on top if desired.
